Wood ear. Mu er means wood ear, which is exactly what it is - a dark, ear-shaped fungus that grows flat against dead hardwood after rain. Dried, it looks like a scrap of burnt paper. Twenty minutes in water and it comes back springy and almost translucent.
These are from Yunnan, in the far southwest. Wood ear is one of the oldest deliberately cultivated fungi anywhere - Chinese farmers were inoculating logs with it more than a thousand years ago, centuries before anyone in Europe grew a mushroom on purpose.
How it is used: soaked, rinsed, sliced, then thrown into stir-fries, hot and sour soup, or cold salads with vinegar and chili. Almost no flavor of its own - the whole point is the crunch.
