Eight points. Ba jiao means eight horns, and the pod dries into a near-perfect eight-pointed star with one seed to each point. It grows on an evergreen tree in the warm south of China and northern Vietnam, and almost the whole world supply still comes from that one corner of Asia.

It is the backbone of Chinese five spice and the smell at the bottom of a bowl of pho. Worth knowing that it has a look-alike: Japanese star anise is a different species and is not edible, which is why spice buyers care so much about where a batch was grown.

How it is used: one or two pods dropped whole into a braise, a broth or a pot of tea, then fished out. Powerfully sweet and licorice-like - too much and it takes over everything.

How to Use

Tea & Decoction

  • Simmer 1–2 whole pods in 500 ml of water for 10–20 minutes.

  • Add 1–3 pods to braised dishes, stews, congee, or slow-cooked broths for a warm, aromatic flavor.

Culinary & Traditional Blends
