Red root, red name. Dan shen means red root, and it earns it - the bark of the root is a deep brick red that bleeds into the water the moment it starts to simmer. The plant is a sage, close kin to the one in a kitchen spice rack, though nothing about it tastes like that.

It is one of the most studied plants in the Chinese pharmacopoeia and one of the most widely planted. Wild danshen was dug out of the eastern hills a long time ago, so essentially everything on the market today, including this, is cultivated.

How it is used: the red slices are simmered into a decoction, usually with other roots. Bitter, faintly cooling, and it stains the pot.
