Picked before they open. These are the buds of Rosa rugosa, the beach rose, gathered before the flower opens and dried whole so they hold their shape and color. In China the flower is tied to Pingyin in Shandong, a county that has grown roses for tea and preserves for well over a thousand years.

Rose is one of the few Chinese herbs that stayed as much a food as a remedy. Rose sugar and rose paste fill mooncakes and pastries across the country, and dried buds have been sold by the handful in tea markets for as long as there have been tea markets.

How it is used: five or six buds in hot water, alone or dropped into black or green tea. Softly floral, a little astringent, and the buds open again as they steep.

  • Steep 2–4 g in hot water for 3–6 minutes.
