From China

The yellow leader. Huang qi means roughly yellow leader - huang for the golden color of the cut root, qi for its standing among the tonic herbs. It appears in the Shennong Ben Cao Jing, the oldest Chinese materia medica we have, and it has stayed near the top of that pharmacopoeia for two thousand years since.

These roots are woods-grown in Inner Mongolia, the dry northern grassland that has always produced the best of it. The plant is left in the ground for several years before it is lifted, which is why a sliced disc shows those fine concentric rings.

How it is used: the discs are woody and faintly sweet, closer to a dried mushroom than to a spice. In northern China they go straight into the pot - a few slices simmered into chicken broth or congee for an hour, then fished out before serving.
