Kudzu, before it went to America. Ge gen is the root of kudzu, and in China it has been food and medicine for well over two thousand years - the fibre woven into cloth, the starch used to thicken sauces, the root one of the oldest entries in the herbal record. It only became a byword for an invasive weed after being planted across the American South in the 1930s to hold soil.
This is the wild-crafted grade, dug rather than farmed. The root is enormous - a mature kudzu root can weigh as much as a person - and it is cut into pale, fibrous pieces.
How it is used: simmered into a decoction, or the starch stirred into hot water for a thin translucent porridge. Faintly sweet, starchy, nearly flavorless.
