From China

The poor man ginseng. Dang shen is what people reach for when ginseng is too expensive or too strong, and it has carried the nickname poor man ginseng for so long that the name is now in the textbooks. It is not related to ginseng at all - it belongs to the bellflower family.

These are wild-crafted, gathered rather than farmed. A good root is long, wrinkled and pale, with a raised ring at the head that Chinese herbalists call the lion head. It only entered the written pharmacopoeia in the Qing dynasty, which makes it recent by the standards of everything around it.

How it is used: simmered into soups and broths, where it is sweet enough to be pleasant on its own. Home cooking more than formula work.
