The twig, not the bark. Chinese practice splits the cinnamon tree in two. The thick inner bark is rou gui, the spice everybody knows. The young twigs are gui zhi, and they are treated as a separate herb with a separate character - lighter, thinner, used for different work.

Cassia is the cinnamon most of the world actually eats. It is native to southern China and was traded out of there so early that it reached the Mediterranean long before anyone there had seen the tree. Egyptian embalmers imported it; Greek writers described it wrongly for centuries.

How it is used: the thin cut twigs are simmered into a decoction, usually with other herbs. Warm and sweetly aromatic, but milder and less oily than a stick of bark.

How to Use

Tea & Decoction

  • Simmer 3–9 g in water for 20–30 minutes.

  • Add a few small twigs to slow-simmered soups, stews, or congee for a warm, aromatic note.

Culinary & Traditional Blends

  • Frequently combined with spices, herbs, and grains in classic seasonal blends and heritage cooking.

  • Not for direct consumption in dry form.

  • To be prepared and consumed as tea, decoction, or soup.

  • Bring to a boil and simmer for at least 15 minutes for traditional decoctions, or steep in hot water for an extended period when used as tea.
