The oldest oilseed we know of. Sesame is probably the first crop humans ever grew for its oil. It was domesticated on the Indian subcontinent and had spread through Mesopotamia early enough for Assyrian tablets to mention it. The black-seeded type is the one Chinese cooks and herbalists settled on - hei zhi ma, black sesame.

These are grown in Bolivia, now one of the main sources of clean organically farmed sesame. The plant is also where the phrase open sesame comes from: a ripe pod splits with an audible pop, which is exactly the image the storyteller was reaching for.

How it is used: toasted in a dry pan until it smells nutty, then ground into paste, scattered over rice and greens, or boiled into the thick black sesame soup eaten across southern China.
