A vegetable on one side of the border, an herb on the other. Platycodon is the balloon flower, the garden plant whose buds inflate like small paper lanterns before they open. The root is jie geng in Chinese and doraji in Korean.

In Korea doraji is food: peeled, soaked to draw out the bitterness, then dressed with sesame, garlic and chili as one of the standard side dishes on the table. In China the same root is a formula ingredient. These come from Heilongjiang in the cold northeast, where the two traditions overlap.

How it is used: simmered into decoctions, or soaked and cooked as a vegetable. Bitter until it has been soaked, faintly sweet after.
