From China

A daisy, of all things. White atractylodes is one of the small group of roots Chinese herbalists reach for constantly, and it belongs to the daisy family - a surprise the first time you learn it. Most of the good material comes from the eastern provinces around Zhejiang.

Chinese practice keeps it strictly apart from its close relative cang zhu, grey atractylodes, and treats the two as different herbs with different characters. The sliced root is pale, dense and marbled, and the smell is unusually strong for something that plays such a quiet part in a formula - warm, sweet, a little musty.

How it is used: simmered into decoctions and soups, almost always with other roots rather than on its own. Bittersweet and aromatic.
