Hibiscus Flowers

From Egypt, by way of West Africa

One flower, three names. In Haiti and Jamaica this is sorrel. In Senegal and Mali it is bissap. In Egypt, where these are grown, it is karkade, and in Mexico agua de jamaica. Hibiscus travelled out of West Africa with people who had no say in the journey, and it took root on every shore it reached - which is why the same deep red drink turns up right across the Atlantic world under a different name each time.

What is in the bag is not the petal but the calyx, the fleshy cup left behind after the flower drops. Dried, it keeps its color completely. In Haiti, sorrel is a Christmas drink - steeped with ginger, cinnamon and cane sugar, then served cold.

How it is used: a small handful steeped in hot water for five to ten minutes, then sweetened and chilled. Sharp and tart, close to cranberry, and it stains a glass a startling red.

Brewing Suggestions

• Bring 1 cup filtered water to a boil or 212ºF.
• Measure 1-2 tsp of tea per 1 cup of water.
