From China
A pond plant covered in thorns. Qian shi is the seed of prickly water lily, whose leaves float like enormous dark plates and whose every surface - leaf, stem, seed pod - carries spines. Harvesting it by hand is genuinely unpleasant work, which is part of why it has always cost what it does.
The same seed is makhana in India, where it is puffed like popcorn and eaten by the bowl. In China it stays a small hard pearl and goes into the pot. One plant, two countries, completely different habits.
How it is used: soaked, then simmered into congee, soups and dessert broths, often alongside lotus seed. Starchy and faintly sweet, with a firm bite that survives long cooking.
