The female ginseng. Dang gui grows in the cold, high altitudes of Gansu and Yunnan in western China. The name means something close to "return to order," and it is one of the most heavily used roots in the entire Chinese pharmacopoeia - it appears in more classical formulas than almost anything else.
Its reputation is old enough that it travelled: Dong Quai turns up in Korean and Japanese medicine under different names, and it was one of the first Chinese herbs to reach European apothecaries.
How it is used: the sliced root is simmered into a decoction, or dropped into bone broth, chicken soup and winter stews. Earthy and faintly sweet, with a smell close to celery.
