The autumn flower. Chrysanthemum is one of the Four Gentlemen of Chinese painting, alongside plum, orchid and bamboo - and it is the one that stands for autumn, because it flowers after everything else has given up. On the Double Ninth Festival in the ninth lunar month people climbed hills and drank chrysanthemum wine.
Two growing regions made their names on it: Hangzhou, whose hang ju is the standard for tea, and Anhui, whose gong ju was literally tribute chrysanthemum, sent to the imperial court. Dried whole, the flowers keep their shape and open again in the cup.
How it is used: five or six flowers in hot water, often with goji berries and a little rock sugar. Light, floral and slightly bitter. Drunk cold in summer across southern China.

How to Use
