Jue ming zi is the small hard seed of a sicklepod, and one of its most ordinary uses in China has nothing to do with drinking it - whole seeds are packed into pillows by the kilo, because they hold their shape, stay cool through the night and make a particular soft rattle when you turn over.

These are dry-fried, which is the traditional preparation: the raw seed is roasted in a wok until it cracks and starts to smell faintly of coffee. That step is what makes the seed give anything up to hot water at all. Bottled roasted cassia seed tea is sold across China.

How it is used: a spoonful of the roasted seeds steeped in hot water for several minutes. Dark and faintly bitter, close to a weak coffee, and it re-steeps well.
