The man root. Ren shen means man root, for the forked shape that makes a good specimen look like a small figure with arms and legs. The botanical name goes further: Panax comes from the Greek for all-heal, chosen by an eighteenth century botanist who had clearly heard the reputation before he saw the plant.
These are grown in Jilin, the province against the Korean border. Wild ginseng from the Changbai mountains there was valuable enough to shape trade and border disputes between China and Korea for centuries. White and red ginseng are the same root: white is simply peeled and dried, red is steamed first.
How it is used: a few slices steeped in hot water, chewed slowly, or simmered whole into chicken soup the way Korean samgyetang is made. Bitter, then sweet.
