A hundred, joined together. Bai he is written with the characters for a hundred and for uniting - a description of the bulb itself, which stacks in overlapping scales like a head of garlic made of pale petals. Dried, each piece is a single curved white scale.
The plant is a true lily, and this is one of the herbs that never really left the kitchen. Lily bulb shows up in Cantonese dessert soups and stir-fries as often as it does in a formula, and anyone who has eaten sweet soup with snow fungus and lotus seed has probably eaten it without knowing.
How it is used: soaked briefly, then simmered into dessert soups with tremella and rock sugar, or dropped into congee. Slightly bitter at first, then starchy and sweet.
