From China
A plant with no wild ancestor. Ginger has been cultivated so long that no wild population survives anywhere - botanists think it came out of island Southeast Asia, but the original plant is gone, kept alive for thousands of years only by human hands passing rhizomes along. It was one of the first spices to reach Rome, carried the length of the trade routes before anyone in Europe knew what plant it came from.
Chinese herbal practice treats fresh and dried ginger as two different herbs with two different names: sheng jiang for the fresh root and gan jiang, warmer and more concentrated, for the dried. These slices are gan jiang.
How it is used: simmered into a tea with brown sugar and red dates, or dropped into broths and decoctions. Hotter and drier than fresh ginger, so less goes further.
Dried Ginger (Slice) – Gan Jiang – Organic Grade
